#REQUEST FOR VEGETABLE CURRY DISHES# VEGETABLE CURRY WITH ROTI -NAZRINA JOOSUB Heat oil in a pot. Add whole jeera & mustard seeds. Add diced onions, braize till done. Add carrots, double beans,gudra beans,green beans,drum sticks, cocktail onions and peas. Cook for 45 mins or until vegies are tender. Add salt, chilli pwd, cr jeera,cr dhana, tumeric pwd. Cook for 10 mins. Add grated tomatoes,green peppers,tomato puree,curry leaves,baby brinjal & green chillies(whole). Cook until 1/2 done and add methi bhaji and cook till done. Add pieces of mielie meal roti and cook until da roti is well absorbed. Garnish with chopped dhania.(Nazrina Joosub) VEGETABLES-DUMPLING WITH VEGIES-NAZRINA JOOSUB Braize 1 large onion in oil. Add 1 tsp chilli garlic paste. Add 4 grated tomatoes. Add 2 tsp salt, 2 tsp chilli pwd, 1/2 tsp cr dhana, 1/2 tsp cr jeera,1/2 tsp tumeric pwd. Cook chutney till half way, add 1 tin koo mix vegetables(drained), 1 tin koo bake beans. Cook. Add lemon juice. Add chopped dhania. Add 1/2 to 1 cup boiling water &dumplings. DUMPLINGS: 1 1/2 cups flour 1 1/2 tsp baking pwd 1 full Tblsp Ghee Salt, ground green chillies, chopped dhania. Make dough with tap water. Dough must be watery ¬ firm. (Nazrina Joosub) VEGETABLES-POTATO & PEAS CURRY-NAZRINA JOOSUB Heat oil, add jeera, mustard seeds, cr garlic, 1 diced onion. Braize till done. Add potato pieces, peas, curry leaves, green chillies, salt, tumeric pwd, green masala & cr jeera. Cook till done. (Nazrina Joosub) VEGETABLES-VEGETABLE KARAI-NAZRINA JOOSUB 1 butternut 1 sweet potato 3 carrots 1/4 Cabbage shred Any other vegies of your choice. Peel, chop & clean all vegies. Add to a pot. Add 2 tsp salt, 2 tsp chilli pwd, 1 tsp cr dhana,1 tsp cr jeera, 1 Tblsp mayonnaise, 1/2 cup yoghurt. Cook on medium heat till vegies are tender & cooked. Make vagaar with whole jeera, mustard seeds, curry leaves & whole red chillies. Add to the curry. Lastly add the beetroot. Boil 2 beetroot till done. Peel & cut each 1 into 4 pieces.(Nazrina Joosub)
