ROYAL CREAM BISCUITS 250g butter ½ cup icing sugar, sifted ½ tsp almond essence 2 cups cake flour, sifted ½ cup cornflour , sifted Method Preheat oven to 160 degrees. . . Beat butter and icing sugar until light and creamy. Add the almond essence, flour and cornflour gradually, mixing after each addition until the dough is soft. Use a cookie cutter or break dough into little walnut-sized balls and shape into small rectangular pieces about 3mm high. Using a fork, make an indentation into each biscuit. Bake for approximately 20 to 30 minutes until golden brown. Remove the biscuits from oven and set aside to cool completely. Filling 125g butter ½ cup icing sugar sifted ½ tsp almond essence Beat ingredients together until creamy. Sandwich the biscuits with the filling.
