Raspberry Jelly Slice!!! So I have been away from my page for a few weeks. Only to be holidaying, camping and organising my childrens birthdays all this month. Hectic!! So my twins birthday party was a success. The theme we did was a high tea spa day, with foot soaps, nail art, tattooing and getting their done and sprayed. The kids had a great time. We went with a pink and white theme for all food and decorations. So I researched some ideas of sweets and treats. I found this recipe which is just four ingredients and is delicious. Normally you see jelly slice with a biscuit base but not this one. You can add a base but I didnt want one. And from the pictures it worked really well. 3 pkts raspberry jelly crystals 3 cups boiling water 1 tablespoon gelatin powder 1 cup thickened cream ( you could also use carnation cream or coconut milk). Combine in a large bowl, jelly crystals, gelatin and boiling water. Stir with a whisk till dissolved. Set aside to cool for 10 minutes. Add the cream slowly into the red liquid and stir to unite. The cooling process in the fridge will separate the two layers. Line a slice tray with baking paper. Pour liquid into lined tray. Place in fridge overnight to set. Once set you can cut into desired slices. This batch made 24 bite size slices. You can fancy it up a little with beautiful fresh berries, some flowers and serve. Great for all parties, including changing jelly colours for occasions such as dark grape and green for Halloween. Enjoy this fun and tasty treat!!!
