Rebecca Hoge and anyone else who is interested, here is the clafoutis recipe!! 4 eggs separated 2/3 c. sugar 6 tbsp. all purpose flour 2 tsp. vanilla extract 1 c. 1/2 and 1/2 1 and 1/2 lbs. fresh cherries (or 1 and 1/4 lb. frozen) Preheat oven to 375 degrees; Butter/olive oil medium size rectangular baking dish In large bowl combine egg yolks and 1/3 c. sugar; blend with hand mixer until ribbons form (app. 8 minutes); add vanilla, flour, and cream; blend on low until completed blended In small bowl, hand whisk egg whites and a pinch of salt (app. 30 seconds) Add whites to batter; beat with mixer on low till blended (app. 1-2 minutes) Preheat baking dish for 4-5 minutes In a bowl, stir together pitted cherries and 1/3 c. sugar Remove dish from oven and pour cherries in; top with batter Bake until set in the middle (30-35 minutes) VOILA!!
