Recently Ive been trying to eat strictly, what Im terming, microbiotarian, which is, as you might very easily guess, a dietary restriction (if I want to get obnoxious about it) that involves allowing only meat, eggs, fish, shrimp, cheese, etc. that comes from animals not treated with antibiotics. Turns out, it basically means choosing to eat vegan when eating at most restaurants and food joints. Not all, but a lot. No more taco trucks, no more food trucks (mostly), no more cheap eats .. youd actually be surprised what one must forgo, kind of an interesting little experiment, actually. Anyways, according to this article, most spam is (not surprisingly) treated with antibiotics, so this new uprise of spam in hip restaurants is kinda hilarious, particularly given the closing thoughts here: While Spams reputation may always precede it, its clear that New Yorkers are starting to recognizing its virtues, thanks to a small but growing handful of chefs and business owners, a feat in an increasingly health conscious food scene. At the end of the day, its not good for you, said Briones. Personally Im really healthy. All the protein here is as hormone and (anti)biotic free as possible. Except for the Spam. But its good for your soul. .. good for the soul or not, Ill probably skip. Either way, the spam-forward effort is 1% comical but inline with it lately being hip to eat trashy, comfort food in NYC (and the rest of Americas hip consensus (not myself, but many)). Comical, me thinks, but it is what it is.
