Recipe - Soft Chocolate Chip Cookies with Coconut Flour (Gluten-Free) Ingredients 2/3 cup coconut flour (2 3/4oz) 1/3 cup arrowroot starch (1 1/4oz) 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/3 cup coconut sugar 1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean powder 1 teaspoon cardamom (optional) 2 whole eggs or 2 flax gels (3 tbsp flax meal with 6 tbsp water, let sit for 10 minutes) 1/3 cup semi-sweet chocolate chips 4 tablespoons coconut oil, liquid 4 tablespoons coconut butter or butter/margarine of any kind, melted 4-5 tablespoons water Preparation Have all ingredients out to room temperature. Pre-heat oven to 350 degrees. In a large bowl, place all your dry ingredients. Stir. Add in your chocolate chips and stir. In a separate bowl, mix the liquids together (coconut oil, butter, eggs, vanilla). Add to the dry ingredients and stir. End with adding in your water. The batter will be thick. Scoop onto cookie sheets. Press down because the cookies do not spread. Yield is about 20-21 cookies. Bake for 14-16 minutes. Cool before removing from cookie sheets. Store in a ziplock bag to keep soft.
