Recipe: No-Fry Fried Potatoes Ingredients -6 large white potatoes -4 tsp. Butter or Margarine -1 Tbsp salt -1/2 tsp black pepper -1 Tbsp chives or cilantro Instructions 1) Wash your potatoes thoroughly. After washing, use a mandolin to slice the potatoes to a thickness of 1/8 of an inch to 1/4 of an inch. 2) In a large bowl, mix the sliced potatoes with your spices. Make sure to coat as evenly as possible before moving to step 3. 3) Place the potatoes in a medium-sized baking dish. Top with 4 one tsp cubes of butter and cover with tin foil. 4) Bake at 350 degrees for approximately one hour. Remove foil and cook an additional 5 minutes to brown and crisp. NOTES: The name of this dish is a bit confusing, so allow me to briefly explain why its called that. When I was a kid, my dad loved fried potatoes but the doctor said we needed to bot eat tbem so much cause it wasnt healthy for us. So, to get around this and still enjoy our favorite side, we started doing it this way. The rest, as they say, is history. RECOMMENDATIONS: This is a simple dish that really cant get much more simple, but if can be added to. Make it a casserole by adding sauce and meats, or add cheese sauce and garlic for scalloped potatoes! No matter how you slice it, this is a versatile addition to any home cooks recipe book.
