Recipe for Roasted Japanese Sweet Potato with Cashews. If you havent tried this quick dish, then I recommend you do. Its a good one, and packed full of nutrients from the sweet potato and the nuts. Youll find (clean) vegan dashi from health food shops (or use organic veggie stock powder), and I use coconut or brown rice vinegar now instead of the umeboshi vinegar, (coz I cant find one that doesnt come from Japan), and tamari instead of light soy. And use olive, macadamia or coconut oil if you prefer. What else is good about the humble sweet potato - depending upon the variety of which there are about 400, the skin and flesh of the sweet potato may be almost white, cream, yellow, orange, pink, or deep purple, although white/cream and yellow-orange flesh are most common. Sometimes this root vegetable will be shaped like a potato, being short and blocky with rounded ends, while other times it will be longer with tapered ends. Its important to have some fat/oil in with your sweet potato dish on order to enjoy the full beta-carotene (Vitamin A) benefits of this root vegetable.
