Recipe for luchis 250 gms maida 1 tbspn oil Salt to taste Mix all together with reqd quantity of water.keep the dough of medium constituentcy not hard nor soft. Keep it covered for half an hour. Make small balls of the dough. Keep in one bowl maida and in another bowl oil ready with you. Take one ball of dough and roll it about three inches in diameter.Apply oil with a spoon and apply maida powder on both sides. Now take another ball .Roll it three inches in dia. Do not apply oil on it.Apply maida powder on both sides.Place one ball on top of another and roll it as thin as possible. Heat oil on full flame and when done turn to medium flame Dip the luchis in the oil without separting them and within a second turn their side and remove immediately from oil. Place the luchis on a plate. You will see two layers.Seperate them to get two luchis.Prepare the rest in same manner. Relish with amritsari chhole or sooji halwa or mango pickle.
