Recipe of the Week: Baked Chicken with Herbs, Garlic and Shallots (Protein) Ingredients: 1 4 lb Organic Free range chicken quartered 3 tablespoons raw grass fed butter 6 medium shallots (cut in half and peeled) 8 large garlic cloves (peeled) 10 sprigs fresh thyme (strip leaves) 8 sprigs fresh rosemary (leaves stripped) 1 1/5 teaspoon unrefined sea salt black pepper to taste Directions: 1.Heat oven to 425 2.cut away excess fat and tuck the wings behind each breast 3.put butter into large shallow glass baking pan, put pan into oven while oven is heating (about 10 minutes) 4.remove pan and add the shallots, garlic, thyme, and rosemary, swirl pan to coat the ingredients in butter 5.dredge the chicken, skin side down, in the butter and herb mixture and arrange skin side up in the pan 6.sprinkle chicken generously with salt and pepper 7.bake until the chicken is browned and cooked through (50 to 60 minutes). Serve with shallots and garlic along with drizzle of pan drippings Serving Sizes: Female- 3-5oz Male- 4-6oz
