Recipe submitted by: Haley Sprague, Secretary Pumpkin waffles apple cider syrup Ingredients: 2 1/2 c flour, 4 t baking powder, 2 t cinnamon, 1 t allspice, 1/2 t salt, 1/4 c brown sugar, 1 c canned pumpkin, 2 c milk, 4 eggs separated 1/4 butter melted. Preheat waffle iron, combine flour baking powder cinnamon allspice ginger salt and brown sugar. In separate bowl stir pumpkin milk egg yolks. Whip egg whites till soft peaks form. Stir flour mixture and melted butter into pumpkin mixture. Fold 1/3 c of egg whites into batter continue to fold all egg whites in and cook. Syrup recipe: 1/2 c sugar 1 T cornstarch 1 cinnamon 1 c apple cider 1 T lemon juice. Stir sugar cornstarch and cinnamon in a saucepan then stir in cider and lemon juice cook till mixture boils and thickens. Remove from heat and stir in 2 T of butter till melted. Enjoy on Thanksgiving morning.
