Recipe that was passed to me now I shall pass it to you! "Italian Mobster Sauce recipe" 1 can of whole peeled tomatoes 28 oz 1 can of tomato paste lots of olive oil 1 head of smashed peeled garlic (can smash with knife) dried oregano (greek is best but you can use any) fresh cracked pepper half bottle of wine (merlot or chianti) 2 buck chuck type balsamic vinegar one small white or brown onion or half a large one or a carrot water 2 1/2 cups in a pan heat olive oil more the better then add smashed garlics and fry them a bit not too much. add can of tomatoes and tomato paste, add wine and for balsamic vinegar pour a circle of it in there. Add the water, add oregano lots lots lots that is the key grind it with ur palms makes the scent flavor come out. Add lots of fresh cracked pepper. simmer and add water as needed thru out brewing. Use medium to low heat uncovered for 2 hrs and 20 minutes or so. Before its ready add a whole small onion or half of a large one whole or a carrot till they are cooked thru or if none a teaspoon of sugar. Scrape sides of pan with tomatoes or spatula to get the dried sauce to mix with the other sauce thru out brewing. Then at end add sea salt or regular salt for flavor.
