Regarding some easy vegan foods to make... There are tons of recipes to be found online. Vegan has some. Read their how to go vegan page too for some basic advice on getting started. Google vegan recipes for more than you could ever make in your lifetime. My favorite vegan cookbook and a great starter one is called Simply Vegan by Debra Wasserman. Ive used it since the 90s. That was a great book to learn how to make many types of simple, tasty vegan meals without complicated ingredients or spending a lot of time in the kitchen. Many of the recipes in that book have 5 ingredients or less. That book gave me a nice foundation for the types of meals I could make. I can cook elaborate meals but usually dont want to put in the time, so I tend to eat pretty simply. For breakfast I usually have oatmeal with fresh blueberries and maybe a little soymilk. Takes 10-15 minutes on the stove, most of which is waiting time. My favorite oats are Bobs Red Mill Organic Rolled Oats, which I usually order from Amazon in bulk (4 x 32oz package). Second favorite are the organic oats from Whole Foods. Another common breakfast is a green smoothie, like 2 bananas, some spinach, and some frozen fruit like cherries, blueberries, or strawberries blended with a little water. Sometimes Ill toss in an orange, some celery stalks, mixed greens, or whatever Im in the mood for (or whatever fruit is about to go bad). For lunch, steamed veggies with hummus have been a recent favorite. Whole Foods has some good organic hummus, and its easy to make your own in a food processor. Yesterday I had steamed broccoli with hummus. Today I had brussel sprouts. Another common lunch I have is a rice bowl, which is some variation on this recipe: stevepavlina/blog/2012/04/the-ultimate-rice-bowl/ For dinner tonight Ill probably sautee some veggies like onions, peppers, and zucchini with some tempeh. I sautee this in vegetable broth, then add a little tamari and spices at the end. Takes around 15 minutes total prep time, and Ill often listen to audiobooks while making it. I dont use a microwave these days. If I have leftovers, I often eat them cold the next day, or Ill just heat them on the stove if I want something warm. These are just some examples. I can mix it up quite a lot if I want more variety. Most of the food I get is organic, usually from Costco or Whole Foods. I normally dont shop at other grocery stores because the quality of the produce just isnt very good (such as youd find at Vons, Albertsons, Ralphs, etc). Sometimes Ill go non-organic with an item if its more convenient. I usually get the regular broccoli from Costco because its pre-chopped, pre-washed, and comes in a big bag, so all I do is open the bag and drop it into the steamer. No chopping.
