Rustic Caponata Serves 6 1 Tbs olive oil 1 large onion, diced 2 garlic cloves, minced plus 2 left whole for rubbing on bread 3 Tbs pine nuts 3 Tbs raisins 1 Tbs red pepper flakes 2 medium eggplants, medium dice 1 Tbs cinnamon 1/2 tsp unsweetened cocoa powder 1/2 tsp dried thyme 3/4 cup tomato sauce 1/3 cup balsamic vinegar Kosher salt and black pepper 1 baguette cut into rounds Method: In a saute pan heat oil over medium-high heat. once oil shimmers add onions, garlic, pine nuts, raisins and red pepper flakes and cook until onions soften. Next add eggplant, sugar, cinnamon, and cocoa cook for 5 minutes. Add thyme, tomato sauce, vinegar, and bring to a boil. Once at a boil lower heat and simmer for 5 minutes. Remove from heat and let cool. While caponata is cooling brush bread with olive oil, season with salt and pepper, grill until marks form on bread then rub with garlic clove. Place filling on bread and enjoy!
