STICKY CHICKEN WINGS. INGREDIENTS: Chicken wings – 10 Lemon juice – ½ cup Soy sauce – ½ cup Apricot jam – ½ cup, melted for smooth consistency Any spicy sauce of your choice – ½ cup PREPARATION: Preheat oven to 160ºC. Trim and arrange the chicken wings in a shallow ovenproof dish. Blend the remaining ingredients and pour over the wings. Marinate for an hour or longer. Roast for about an hour, turning occasionally, until the chicken wings are cooked and golden brown. Here’s a Portuguese recipe for a spicy sauce. 4 chilli peppers, cleaned and chopped finely, juice of one lemon, 3 cloves of garlic, minced finely, one tablespoon of chopped fresh parsley, (optional), one tablespoon Paprika, 4 tablespoons of Olive Oil, 1 teaspoon Salt Remove stems and seeds from peppers. Grind and mix all ingredients to a fine paste by hand or use a blender or food processor. If you want to go hotter add ground cayenne pepper or pepper flakes to taste. Cook in a hot frying-pan for a few minutes. Store in a sterilized jar in the refrigerator and use after a week.
