Salted Eggs Recipe! Recipe from Kc Tan in SHC. THANKS. 1 part coarse salt to 3 parts water depending on how big your jar size is. No. of eggs also depend on your jar size. For example, I use 400 g coarse salt to 1200 ml water using a jar about 25cm high which can accommodate only 16 eggs. can use either duck or chicken eggs. Method: wash eggs and leave to dry. boil water and salt, stirring occasionally, until the salt fully dissolves. leave to cool completely (I left it overnight). Then put the eggs in the salt water. make sure all eggs are submerge in the salt water, you may want to put something on top of the last eggs to make sure they are completely submerged. (the eggs will float in salt water). close the lid and leave for 20 days. try out 1 to see if the saltiness is to your liking. For me, 20 days is enough. Take out all the eggs if it is salty enough. Note : the longer you leave them in the salt water, the saltier they become.
