Sausage and Zucchini Spaghetti with Red Sauce, Sauteed Brussel Sprouts with Bacon and Red Peppers Super easy supper tonight....and used up some of those zucchini which are exploding from the garden after all those days of rain! Started by putting some spaghetti on to boil with a little sea salt. Next, browned some ground italian sausage in a large pan with garlic and chopped onions with a splash of olive oil. Chopped the zucchini into fairly small slices so they would cook quickly, added those to the sausage on fairly high heat. Turned almost constantly while stirring the pasta every once in a while. In a smaller pan, chopped some brussel spouts and half a (really large) red pepper, along with 3 slices of bacon cut up into very small slices (about 1/2 an inch). Tossed almost constantly, adding a splash of olive oil when it seemed like all of the bacon grease was soaked up by the veggies. Keep tossing until bacon is crispy and sprouts are browning up. Season with sea salt and cracked black pepper. In the large pan, add a large jar of your favorite red sauce, bring to a boil, and then let simmer until the pasta is cooked. While I was cooking, Hudson baked a can of crescent rolls (one of his faves) for the kids to have with their meal, and Elliot and Lev were snacking on strawberries and grapes which I had rinsed and chopped up earlier. Super yum...and super easy!
