School meals in England will have to include at least one portion of vegetables a day - and no more than two portions of fried food each week. BBC News ministers have announced regulations for school food in state schools, which will apply from January 2015. The Food Doctor says this is a step in the right direction. So cutting back on fried foods is important, but what does that actually mean in practice? • First up try to limit fried foods to once a month or less. If you own a deep fat fryer or similar device bin it so you won’t be tempted to use it • Aim to use cooking methods such as casseroling, boiling and steaming which stop foods from ever reaching temperature above 100C. • Swap chips for homemade potato wedges – cut potatoes (or even better sweet potatoes) into wedge shapes leaving the skin on, place in a carrier bag with 1tbsp of oil and seasonings of your choice. Shake well then arrange on a baking tray and cook at 180C until just soft • Have a go at ‘breading’ your oven chicken and fish and bake it in the oven instead of eating the deep fried version. Dip the chicken or fish in seasoned flour, then beaten egg, then either wholemeal breadcrumbs or course polenta. Place on a lined baking tray and cook at 180C until the fish or chicken is cooked through
