Second recipe: Adobo Chicken 1/3 cup apple cider vinegar 4 tsp. minced garlic 4 tsp. cumin 2 tsp. Mexican oregano 1/2 tsp. black pepper 1 tsp. salt 1/4 to 1/2 tsp. cloves 1/2 tsp. cinnamon 2 TBS. vegetable oil 3/4 cup chicken broth (or stock) 3 bay leaves 3 TBS lime juice (one small lime) 1 to 3 chipotle chilies (depending on how hot you want it) 4 to 5 lbs chuck roast OR chicken (I like to use chicken thighs) Mix first 8 ingredients and broth together. If using chuck roast, cut into large chunks. Sear beef or chicken in some vegetable oil. Put into Dutch oven. Add remaining ingredients. Bake, covered at 325 for 1 and 1/2 to 2 hours until done and falling apart. Add a bit more broth if too dry. Shred with fork. This can also be adapted to a crock pot. Just cook on low 8 to 10 hrs. Shred and serve. The recipe can be halved. Even better the second day!
