Seven Layer Dip Pizza Cupcakes Ingredients 1 (11 oz) tube Pillsbury thin crust pizza dough 1 (14.5 oz) can refried beans 1 pound ground beef 1/2 (.1 oz packet) Old El Paso taco seasoning 1 cup homemade or storebought salsa 1 cup homemade or storebought guacamole 1/2 cup sliced black olives 1/2 cup sour cream 1 cup shredded cheddar cheese 1 cup freshly torn lettuce leaves 1 pinch coarse salt Directions 1. Preheat oven to 400. 2. Roll the Pillsbury pizza crust out on a floured surface. Using a cookie cutter, cut 12 circles out of the dough. Ball the dough up, roll it out again for 10-12 more circles. 3. Lightly coat a muffin tin with cooking spray. Press each pizza circle into each tin, pressing it up the sides as best you can. 4. Spoon a little of the refried beans into each pizza cup. (You can leave it off of some if desired.) 5. Slide into the oven and bake for 9 minutes, or until slightly puffed and browned. 6. While baking, brown your beef. Drain excess fat, then season with the Old El Paso seasoning and a pinch of salt. Set aside. 7. At this point, you can set out the baked pizza cups, along with the lettuce, olives, sour cream, guacamole, beef, cheese and salsa on the table.
