Several people have asked me for my recipe for sprouted lentil hummus. I usually sprout the lentils for 2-3 days beforehand. You can substitute cooked lentils. I hope you enjoy this as much as I do! Lentil hummus Serves: 16 Hummus 2 cups raw sprouted or cooked lentils ⅓ cup tahini ¼ cup lemon juice 1 teaspoon sea salt ¼ teaspoon ground black pepper 4 cloves garlic, in pieces Topping 1 tablespoon olive oil 1 teaspoon minced fresh parsley Combine hummus ingredients in a blender or food processor and blend until smooth. Put into a serving bowl and drizzle the olive oil over the hummus and sprinkle with chopped parsley, if desired.
