Sharing a wonderful recipe from Stephanie at The Unconventional Equestrian (check out her clicker training clinic this weekend) By popular request, here again is the recipe for: “Erin’s Low-Sugar Horse Treats” (slightly modified by Stephanie for Clicker Training purposes) These treats are especially suitable for clicker training, as they are fragrant, crunchy and something different/special from what your horse normally eats — definitely in the “reward” category, but with less sugar! Cook enough rice so you end up with 6 cups cooked rice. Let cool to room temperature. (I use brown rice. ~ Stephanie) Into the cooked rice, stir: 1 cup ground stabilized flax (or whole flax — use whichever you have handy) 3 tbsp cinnamon OR 3-4 tbsp vanilla extract OR 3-4 tbsp maple flavour extract 1/2 cup flour Use a small scoop (such as a melon-baller) to scoop cookies, tightly packed and close together, onto parchment-lined cookie sheets. You’ll need two cookie sheets for the full batch. It is very sticky dough! Bake in the oven for about 40 minutes, at 275 degrees Fahrenheit. Remove from oven, turn cookies over, and bake for another 40 minutes. They are done when you can hardly squish them at all. They should be hard and crunchy, but not burnt! As an alternative, you can bake the mixture “granola-style” by firmly pressing half of the dough into each cookie sheet, then baking for 40 minutes. Remove to break up into small treat-size chunks, then continue baking for about another 40 minutes until hard and crunchy. Cool for several hours to let any heat and remaining moisture dissipate. Refrigerate or freeze. They will keep for a few weeks, while refrigerated, if baked properly. They will eventually begin to mould, as there are no preservatives. The treats will have very tiny amounts of sugar — if you used an extract for flavouring, about 3 grams per five dozen treats.
