Shout out to Phyllis from West Palm Beach, FL for her winning #PastapaloozaIV recipe! To prepare her Cold Pasta Salad Medley, start by boiling Rotini, Penne or Elbow pasta, and then set aside. Toss pasta with olive oil, grated cheese and black pepper. Add thinly sliced red onion, julienne slices of Genoa salami, chick peas, marinated artichoke hearts, sliced roasted red peppers, sliced black olives, and chunks of sharp cheddar cheese. Toss it all together until well blended and serve at room temperature. Garnish with fresh basil. ENJOY!
