Shrimp and Artichoke Linquini-Paula Gati This is a fast and easy dish…..serve with a nice salad and some nice crusty italian bread…and got yourself a great meal !!! 8 oz of linguini 2 tbls olive oil 1 medium onion chopped 2 cloves of garlic crushed 1 lb of large shrimp, peeled and deveined 1 pkg of frozen artichoke hearts 1/2 cup of white wine or chicken broth 2 tbls of lemon juice 2 tsp of lemon zest salt and pepper to taste 2 tbl of chopped flat leaf italian parsley Cook Pasta in salted boiling water. While pasta is cooking, sauté onion and garlic in oil for about 5 minutes…..remove and put on side in same pan add shrimp and cook for about 3 or 4 minutes, stir in artichoke hearts wine or broth, lemon juice, lemon zest, salt and pepper and cooked onion and garlic, heat till boiling then reduce to simmer and cover and continue to cook for 4 or 5 minutes. Toss with cooked pasta and top with parsley. *can easily be doubled
