Simple dinner idea #2! I am a huge fan of Grain Bowls... Brown rice, quinoa, millet are all gluten free, filled with fiber, vitamins and minerals and fuel your body with slow burning energy. Tonight... A brown rice and black bean bowl. In the pursuit of pure convenience, you can stock the freezer with frozen brown rice and cook according to the package directions. In a skillet, heat frozen peppers, onions, corn (buy organic so it is GMO-free!) and a BPA-free can of black beans as well as your favorite salsa. Serve over your rice and top with diced avocado. I love mine with siracha hot sauce too! Protein, healthy fat and good quality carbohydrates..quick and easy as well.
