Since Friday I had a desire for Chilaquiles. I was debating if to call a friend and go into town to one of many great restaurants, or if to make them myself. So I said, I have all I need to cook them: Dry tortillas, tomatoes, anions, garlic, chiles, cilantro, comino, salt, paper, cheese and cream. And started the processes. I boiled the red tomatoes with sea salt, cut onions, garlic, chiles, etc, Took out the blender, blended the tomatoes and all the sauce ingredients. I cut the tortillas in small pieces, I fried them a few at the time and put them aside on a paper towel to take the excess oil out. When the sauce was blended I put it to fry with little oil, to mix better all of the flavors. ( my mother used to do it that way) Then put my fry tortillas in the pan with the sauce, added cheese and cream on top. By then almost an hour went by. By the time I finished cooking I was not so hungry and had a big mess in my kitchen. NO WONDER EVERY TIME I GO OUT TO BREAKFAST I ASK FOR CHILAQUILES.
