Since for as long as I could remember, I have always wanted to bake a cake. Not just a cake but desserts too. Would drool with envy when I saw such wonderful posts and hoped I could replicate it someday. One day this hazelnut chocolate ganache cake image pops up, made by the super talented Nidhi S Raj who had baked it for her birthday. I decided then and there that if I baked a cake for my birthday, I would bake this one. Got myself in a good headspace with Nidhi on standby to sort out all glitches. Put on some music, started getting the dry mix together. About to start the wet mix and realised, shit had added the sugar to the dry mix. Frantic call to Nidhi and she told me to start all over. A huge speed breaker at the beginning and I started to falter. Then made up my mind to start again. Got the mixes correct this time but when beating my egg butter and sugar, my hand mixer fell apart. Started to whisk by hand and suddenly the mix looked grainy. Frantically dialled Nidhi, phone ringing, no response. Oh god what do I do. Pinged the every talented and helpful Suchit Save. HELP I say, he says HEIN. Listens to me patiently and advices to keep mixing till I get a smooth mix. Did some push ups, strengthened the muscle and whisked away. Slowly it started to come together. Quickly folded the dry mix. Popped it in the oven. Rarely use my oven and still confused about the settings. Another chat with Nidhi and started staring at the oven like a hawk. Mid way decided to check the temperature of the cake. Inaugurated my thermometer and realised that the temp was not right. As a result of removing the cake in between, the Center sunk and so did my heart. Cranked up the temp, changed the settings and waited some more. Toothpick comes out clean what a relief. Phew. Exchange of photos and Nidhi tells me how to salvage the sunken top and make the cake look pretty Then time for the ganache, nidhis method didnt seem to work. The chocolate didnt melt with the heat of the cream, I must have done something wrong. Removed all the liquid and tried the double boiler method. Finally the ganache seems to come together. Whisked it to a gloss and then time for the final brainstorming with Nidhi. Assembled the cake, tried some shaky hand piping and managed to make the cake look pretty. Now just waiting to cut it when the kids wake up and hope it tastes as good as it looks A big hug and thank u to the super talented and patient Chef Nidhi and to the king of dudettes suchit
