Since news of the upcoming Market closing recently circulated, we’ve been overwhelmed with community sentiment for a concept that we now keenly understand has been as close to your hearts as ours. This has been a difficult decision, but as the saying goes, as one door closes, another opens. While the Market and Viking Cooking School will phase out over the next two months, beginning with classes on February 28 and the Market on or before March 12, our commitment to The Woodlands remains unwavering. In fact, with resources freed, we now have the opportunity to become more involved than ever as ambassadors of our hometown through a range of initiatives, including future enhancements to other concepts: Hubbell & Hudson Kitchen, Hubbell & Hudson Bistro and Hubbell & Hudson Catering. The Kitchen will continue to offer a curated market experience, Catering operations will grow and feature many of the prepared foods that have become neighborhood classics, and perhaps most importantly, we will be creating an expanded environment at the Bistro that will serve as a well deserving showplace for Chef Austin Simmons, who we feel will soon earn recognition as one of the Greater Houston area’s top toques.
