Slow Cooked Banana Cake: 4 tbs butter 3/4 cups caster sugar 2 eggs, lightly beaten 3 medium ripe bananas, mashed(I used 2) 1 tsp vanilla essence 1/4 cup milk 1/2 tsp bicarbonate soda 2 cups self raising flour, sifted 1. Grease loaf or cake tin and line with baking paper 2. Beat butter and sugar with electric beater till light and fluffy. 3. Add eggs one at a time, until combined. Stir in bananas and vanilla essence(mixture will look curdled). 4. Combine milk and bicarbonate of soda in a small jug. Fold in flour and milk mixture into banana mixture. 5. spoon into prepared tin. Cook on high for 2 hours, tea towel under lid to keep moisture out. 6. Lemon icing: beat 125g light cream cheese in a bowl with electric mixer until light and fluffy, gradually beat in 1 2 cups icing sugar and 2 tsp finely grated lemon rind until combined. 7. Speed over cooled cake and decorate with shredded orange rind. (I personally just put chocolate icing on mine and the family love it)!!!
