Slow cooker teriyaki chicken I popped soy sauce , rice wine vinegar, local honey foraged from the markets - Neil Jacobs!, white pepper, grated ginger, minced garlic and a chopped shallot over chicken thighs in my crock pot- cooked for 4 hours til tender and delicious ;) Some is for my sushi Im going to make later:) Though tonight I think ill have it with a Japanese cucumber salad (sunomo) and maybe some sorba noodles - who knows?!!! Ill see where the mood takes me You guys know how I have issues with hidden preservatives and additives in foods. Well I decided ( after purchasing some pickled ginger- that was kinda stupid!!!) Id make my own It really is simple - plus I know whats in it!!! I replaced the castor sugar with honey which I heated up with rice wine vinegar then while it cooled down a bit I sterilised a jar and lid, used a vegetable peeler to make strips of ginger . Pop a teaspoon with salt In The ginger to help draw out the liquid - after 20mins squeeze out the excess water , place in a jar and top with the slightly cooled vinegar honey mix :) Its gone slightly pink - a chemical reaction between the ginger and vinegar - but not that dyed scary pink I see in the shop stuff :) Cheers Leonie
