So I generally get a few messages during the week asking questions and sharing techniques which is great, I love talking to all of you and we have some seriously good cooks following this page which makes me feel very humble. So as its colder here in Hong Kong one of you brilliant people suggested a soup but with a twist.....NO MEAT. I know right, no meat? but its an idea so I did it. SOUP IS DEAD EASY! Make it, never buy it again and you can freeze it...AWESOME. So here is my Tomato soup, ingredients are very very simple Carrots Celery Onions (these three are used in most soup bases) 2 cloves Garlic 6 large Fresh Tomatoes 2 Tins of plum Tomatoes 1.5 liters of veg stock Sea Salt (to season) Black Pepper (to taste) Couple of glugs of Olive Oil Method Chop all veg, tomatoes and garlic Sweat and soften veg and garlic for 15mins in olive oil Add fresh tomatoes (halved) and tinned tomatoes along with Veg stock Bring to boil Reduce to simmer for 15 mins Season with Salt and pepper to taste ALL DONE! Eat with beautiful bread and freeze the rest
