So I made a nice meal tonight. I made stuffed portabella mushrooms, bacon wrapped asparagus, and kale and tomatoes. Stuffed Mushrooms: 1. took the stems and gills out of the mushroom caps and set a side. 2. mixed in a bowl mushroom stems and caps (chopped), 1 tomato skinned and chopped, feta cheese, 2 cloves of garlic, greek seasoning, seasoned bread crumbs, and bacon (chopped and cooked) 3. Stuffed the caps and baked at 350 for 15 minutes Bacon Wrapped asparagus: Took 4-5 thin asparagus stalks, cut off the tough parts, then wrapped them in a slice of bacon, (repeated 4 times so there were 4 bunches). Fried in a pan with garlic, salt, pepper, and balsamic vinegar. Kale and tomatoes: In the pan that I friend the bacon wrapped asparagus in I threw in about 4 big handfuls of kale, and a bunch of cherry tomatoes cut in half. I then added greek seasoning, and garlic, and some additional olive oil as needed after the bacon grease was absorbed into the kale, cooked until the kale was tender, and the tomatoes began to get soft. The meal was both pleasing to the eye as well as to the mouth, with its rich red and dark green colors, and its mix of soft and crispy textures. I feel that this would have paired well with wine, but I was just drinking water with it. Well anyway this meal turned out really delightful so I figured that I would share it with you all. :)
