So Ive got a mess of vine-ripened tomatoes. What Ive traditionally done with such is slice them up, cover with cheese and bacon, and bake. Makes a very tasty low-carb dish. However, Im wondering if I could zest it up a little bit with other vegetables. Ive got some bell pepper and spinach. Maybe some onions? Any ideas appreciated.
