So a couple weeks ago I went on a muffin making journey. I made about 5 different batches, each a little different. I wanted to come up with a super healthy muffin, with maybe vegan or vegetarian substitutions. I did a lot of research and experimentation, and this is the best recipe I think I came up with. I also did a variation with yogurt that was pretty good too. Vegan Muffins 2 Cups - Whole Wheat Flour (or any gluten free substitute) 1/2 teaspoon - Salt 3 1/2 teaspoons - Baking Powder 2/3 Cup - Applesauce (you can make your own applesauce by slicing, coring, cooking in a big pot with a little water until soft, and mashing.) 1 Cup - Almond Milk 2 1/2 Tablespoons - Agave Nectar 1 1/2 Tablespoons - Olive Oil *You can also add chopped fruit or nuts if you prefer, or even your favorite ground tea leaves for aroma! Preheat Oven to 375 degrees Combine Dry Ingredients and Combine Wet Ingredients, Separately Combine Wet and Dry ingredients together until everything is moist and mixed well Bake in a greased muffin tin, 25 minutes Makes 12 medium sized muffins
