So...dinner tonight. No recipes. Using what Skip brought home from the Farmers Market. The first course I decided to make a Chopped Salad. I took the Squash and baked it, let it cool and then diced it in a big dice. I added chopped Tomato, Avocado, Black Radish and Mache. Mixed it with some Olive Oil and Red Wine Vinegar. Salt and Pepper...and some dollops of Burrata, and Voila! It made a great salad! For the main course, I remembered a bowl of pasta I had several decades ago in Genoa in Italy. I get a lot of inspiration from meals Ive had in Italy. I made a Pesto with Arugula, Pine Nuts, Garlic, Parmesan and Olive Oil. Then I boiled the various Potatoes (Purple and two different White Potatoes) until they were soft but still firm and chopped them in big pieces. I chopped the Haricots Verts, boiled them for about a minute and a half, then shocked them in cold water. I boiled and drained the Pasta and added the Pesto, Potatoes and Beans, then sprinkled some Pecorino over it all. Delicious. And I used everything that Skip brought home.
