So far we have heard of lawyer turned chefs, engineer turned chef but I think this is the first time I have met a Dr turn chef in Singapore. Frankly I was quite shocked when my old RJC friend and Medical colleague told me that he and his wife are now running a restaurant! I had lunch today at his place, Snack Food Company which is located on the 2nd level of CT Hub. Basically he is dishing out what he calls Singaporean favourite food. Now, this term is not what you think it means. He is not doing laksa, char kway teow and hokkien mee. Instead, it is Singaporean Favourite Food of the 21st century which would include international stuff like Korean Beef Bulgolgi, Italian pastas as well as local stuff like Crab Bee Hoon. But he doesnt serve it straight up, instead he has chosen to intermarry cuisines of different cultures, like a beef bulgolgi wrapped in vietnamese rice skin, a Har Cheong deep fried soft shell crab with italian tomato pasta and chap chye salad with black fungas and tau kee! When it comes to attitude to food, we both agree that food must be tasty. But what we dont quite agree on is the healthy level of the food. I think the Health Promotion Board would be more happy with Dr Chan than me. He would do things like removing the fat off the beef to make his bulgolgi, serve brown rice and add stuff like Chia seeds and wolf berries. The food is nice. Not at the tok kong level yet, but definitely something unusual and if you are the type that likes brown rice and chia seeds, this is definitely a place to visit. For lunch he is serving his lunch sets which are one dish like beef bulgolgi and tofu with a bowl of brown rice for $8. For dinners on weekends, he does a 9 plate degustation menu for $49. Dinner is intimate and unhurried as they will only serve 20 pax and have only one round per evening. They bake some interesting cookies like Rojak cookies which is surprisingly nice as well as Bulgolgi buns. The restaurant is only 2 months old and so it is still finding its footing. I shall be suggesting some of my favourite dishes which he will include in his next degustation menu.
