So, for anyone interested, Jeanne and I started eating a Paleo diet on Sept 1. If you arent familiar, Paleo is essentially a way of eating where you remove heavy carbos and processed food from your food choices and replace them with as much natural food as possible. I am not eating grains or grain products or beans or oils derived from pressed seeds... etc. We eat a lot of meats (a lot of eggs) and a lot of vegetables. Its been pretty good so far and I am fairly confident I can make the switch for good. Anyhow, I got the first evidence of how this is effecting my body today at my doctors appointment. We had bloodwork taken last week at about 1.5 weeks into it. Today I learned that my Triglycerides are down to a normal person level (mine were always way high for years), my overall cholesterol was down to normal levels, my good cholesterol was up, my kidney function was way up, my liver function was in the normal range, my Hemoglobin A1c levels were down 1.5 points (big thing for diabetics...) and I expect that to be even better next test because I am taking like half the insulin I used to, On top of that, I have lost 13lbs. since I started this. This last week I have started Tai Chi classes up again and started a new class for blacksmithing (not normal exercise I know, but tell that to my hammer arm hehe). With such dramatic results after such a short time, I dont know how I could possibly go back to eating the way I did before. I was always pretty fatalistic about me checking out early and over the last couple of weeks I am starting to change that thought which is weird because I have felt that it was inevitable for years now. Well see how the next few months go...
