So here Ive been for years, listening to my diners rant about how good my cooking is. So, I decided after my last few meals that maybe I should start a blog or something. Ok, so that was really somebody elses idea, but I digress... Anyway, I thought to myself, why start a blog when I could just use Facebook? I mean, I dont want yet another thing I have to maintain, right? So after a few days of cooking dinner, and hearing how great I am at it, especially since the dinners were made with leftovers, I thought Id start writing. And so it begins... Keep in mind the order in which I do things, as there really is a method to my madness! ----------------------------------------------- Rib Eye Steak and Twice Baked Potatoes - (literally, cause theyre made with leftover mashed potatoes!) So I took 7 or 8 high quality rib eye steaks out of the freezer to defrost for dinner, only to find out shortly before dinner that three of our diners wouldnt be there for dinner! Yeah, communication runs deep in our family - not! So anyway, heres what I did... I seasoned one side of the steaks liberally with Montreal steak seasoning, and the other side with garlic salt, garlic powder and onion powder. I then drizzled some olive oil over the steaks so when I put them on the grill, they wouldnt stick to the grates. Youll see why later.... Keep in mind, these steaks are at room temperature (as they should be!) I then fired up my Big Green Egg (best smoker/grill money can buy IMHO) while I went on to make my taters and green beans. I took my left over mashed potatoes (my mother in law had made fried chicken and mashed potatoes the night before - I used the left over chicken earlier in the day in my ramen noodle soup with a touch of sesame oil, mmmm), but I digress again... and put the taters in a mixing bowl. I then chopped up about a 1/2 dozen thick slices of bacon and cooked them slowly in a pot (youll see why a bit later). Once they were crisp, I took about 1/2 of the bacon and also drizzled about a teaspoon or so of the bacon grease onto the mashed taters. I then added some monterrey jack cheese (we were out of the Mexican blend I had wanted to use) and added some chopped green onions, some garlic salt, a lot of pepper and more heavy cream to the mashed potatoes and mixed them all up real good. I then took a large muffin pan, sprayed it good with cooking spray, then added the potatoes to the pan, sprinkled on some paprika for color, and then put them in the oven at about 375 degrees. Next, I took some frozen green beans and added them directly to the pot with the bacon and the grease, added about 1/4 to a 1/2 cup of water, topped that with some Montreal seasoning, covered and cooked them on med low in order to steam the green beans. Next, I took the steaks out to the grill. The grill had reached about 800 degrees! No, Im not kidding, thats why I love my Egg! I then opened the lid on the Egg quite carefully (yet I still managed to burn all the hair off my arm!) and put the steaks on the grill oil side down and closed the lid. I waited about 2 minutes or so, and then turned the steaks over. Closed the lid for another two minutes, after which I took the steaks off the grill and brought them inside to rest for about 4-5 minutes (you MUST do this!). While they were resting, I then put everything else on the table. The steaks were cooked perfectly medium rare, just as we like them, the green beans and potatoes were awesome, and everyone lived happily ever after....
