So here is the whole process of making the Gouda from start to finish. I have to say its very satisfying making a cheese from Scratch, seeing from the raw milk to it being packed as a cheese into a mould for pressing. The milk is heated to approx 33c then we add the cheese cultures that are diluted in the milk. We leave it to sit for an hour 1/2. Then the curds will set, these are then cut and then its cooked to 40c. The curds then start to become firmer.
