So my flirtation with reintroducing dairy was short-lived and resulted in a fussy baby with mucousy stools. Thus, I am still in search of a good dairy-free caramel sauce for macchiatos. I gave this one a whirl tonight: elanaspantry/vegan-caramel-sauce/ I didnt want a honey flavor so I used corn syrup, and I didnt have shortening but I DID have ghee (which is Indian clarified butter -- its basically straight butterfat sans milk proteins, so it is fine according to my reading). The instructions were quick and easy and the result was a nice consistency, very dark, very VERY rich caramel sauce. I tried it on apples and whew. It has a pretty overpowering flavor (this could be the result of the ghee). If you try it, I recommend pouring through a fine mesh sieve because I didnt notice till afterward that there were little black flecks of burned sugar in mine. Well see how it is in espresso tomorrow. Angela Thomas Bates, what is the caramel recipe you use?
