So sorry it took me so long to get this to you Karen Pennell Pumpkin Roll 2/3 C. Solid pumpkin 3 lg. Eggs 1 C. Sugar 1 tsp. Vanilla 3/4 C. Flour 1 tsp. Ground ginger 2 tsp. Cinnamon 1 tsp. Baking powder 1/2 tsp. Salt Mix together well. Grease a rimed cookie sheet VERY well....line with wax paper & grease wax paper well.Spread mixture on to cookie sheet making sure to get all the way to the edges. Bake at 350 for 15 mins. Ease off cookie sheet onto a dish towel WELL dusted with powdered sugar. Roll up jellyroll style in towel & let cool 15-20 mins. Filling 1 C. Powdered sugar 1. 8 oz. Softened cream cheese 4 Tbsp. Softened butter 1 Tsp. Vanilla Mix well. Unroll pumpkin roll spread on filling leaving a 1 inch boarder all around the edges. Sprinkle with 1 C. Chopped walnuts. Re-roll place on foil sheet & dust with powdered sugar. Keep in refrigerator. Also freezes well.
