Sorry were late getting this up, but on Mondays Cooking For Yummies on July 7, Pauline Lutmer told us how to make a simple Show Off Cake. Heres the recipe: Simple Show-Off Cake Preheat oven to 350 degrees. Grease and flour one 9x13 pan, or two 8 or 9 inch round cake pans. INGREDIENTS 1 Box Cake Mix (Yellow, Chocolate, or White work best…any brand) 1 envelope dry whip topping mix (any brand…store brands work fine and cost less) 4 eggs 1 cup cold water Place all ingredients in bowl of electric mixer. Mix on low until ingredients are incorporated well, then BEAT batter for 4 minutes. Pour batter into either a 9 x 13 cake pan or two 8 or 9 inch cake pans that have been greased and floured. Bake at 350 degrees for about 30 minutes or until toothpick inserted in center of cake comes out clean. If you are making layer cake, let the cakes cool for 12 minutes before removing from pan. 9 x 13 cake can remain in pan as you will be frosting only the top of the cake. Ice cake with your favorite frosting…I like to make mine from butter, cream cheese, vanilla or almond extract and confectioner’s sugar…use a little heavy cream if icing is too stiff. Refrigerate after icing the cake if you use the cream. This is a fool proof recipe that tastes delicious and has a tender, moist texture. Enjoy!
