DEEP-FRIED SAFFRON BALLS That’s how you do it: Cook: 2 hours, you’re only active half of the time Difficulty: easy Cost: approximately 5 Euros Ingredients: - 250g flour - 100g butter - 20g yeast - 300g sugar - 300g flour - 1/8l milk - 50g butter - 3 egg yolks - juice from 1 lemon - 3 tbsp. rose water - oil for frying Method: Grind saffron using a mortar, then stir in lukewarm milk. Add 3 tablespoons of sugar and crumble in the yeast. Let leaven for 15 minutes. Knead flour and butter flakes with egg yolks and leavened mixture in a bowl until smooth. Cover and let leaven in a warm spot for 45 minutes. In the meantime, boil down the remaining sugar and 330ml of water to a syrup and stir in lemon juice and rose water. Knead leavened dough and form 20 balls. Fry one after the other in hot oil for about five minutes until golden brown. Place on kitchen roll to soak up the excess oil and roll in syrup. Done!
