Soup deepens. Slice leeks--to de-sand, soak in a sink full of water, easier in a colander so you lift them out and leave the sand behind. Sweat them and mushrooms in a skillet until they release liquid. Pour them into the pot, being sure to add all the released liquid. Open a can of fire roasted diced tomatoes (remember this old-fashioned critter for opening?). Add that and three sliced carrots. Stir. Cover and continue simmering.
