Soy Sauce and Rice Wine Marinated Chicken AKA - Mikakos Chicken(Thanks Tina) Ingredients: 2 cups - Soy Sauce or Lite Soy Sauce 2 cups - Mirin (sweet Rice Wine) 10 pieces - apx 2 heads of Garlic (To taste) 2 Tbsp - Black Pepper (To taste) 1 Tbsp - White Pepper (To taste) Boneless Skinless Chicken Thighs (not breasts, they dry out) Marinates aproximately 6-10 lbs of boneless chicken thighs Directions: Mix the Soy sauce and Mirin Rice Wine in a bowl. Chop, press or dice up the garlic (I use an electric chopper) then add it and the pepper to the soy sauce/mirin mix. Stir together and then pour a small amount into a marinating tray. Layer the chicken in the tray until the bottom is covered. Pour more marinade on top of layer of chicken and repeat process until all the chicken is used. Pour remaining marinade on top and put (covered) into refrigerator. Marinate over night or for up to 2 days. The longer you marinate the chicken the more salty it will taste. Turn the chicken at least twice a day to evenly coat both sides. Add more garlic or pepper to taste. I personally have started using zip-lock bags to marinate my chicken. It is much easier to turn the chicken by just flipping the bags and clean up is a snap!
