Speaking of meatloaf, heres the recipe for my favorite: 2 T. unsalted butter 1 1/4 cup finely chopped onion 1 1/4 cup finely chopped portobello mushrooms 1/2 cup finely chopped celery 1/2 t. dried thyme 1 t. finely chopped garlic 1/2 cup grated carrot 1 cup fresh bread crumbs 1/2 cup milk or half and half 2 eggs 1 1/2 lb ground chuck 1/2 pound ground pork 4 slices bacon, finely chopped 1 3/4 t Kosher salt 1/2 t pepper 1/2 cup catsup 2 T. brown sugar 2 T. cider vinegar 1. Oven to 350. In large skillet (dont you just love that word, skillet? Doesnt it remind you of cowboys?) heat butter until melted and foaming. Add onions, mushroom, and celery and season to taste with salt and pepper. Cook three minutes, but make sure you dont brown. 2. Sprinkle thyme over onion mixture. Rub garlic and a pinch of salt into a paste, then add it to the mix as well. Cook and stir until onions are translucent. Stir in grated carrot and remove from heat. Cool completely. Meanwhile, soak bread in milk or half and half. Lightly beat eggs and add to bread and milk mix. 3. In large mixing bowl combine ground meats, bacon, cooked veggies, and bread crumb mixture. Sprinkle the 1 3/4 tsp salt and pepper over the mix. Now the fun part comes. Roll up your sleeves, shout Yahoo! and use your hands to mix until well blended. 4. Turn mix into rectangular baking dish. Using hands, shape into 9 x 5 inch loaf. 5. Combine catsup, brown sugar and vinegar. Spoon this mix over top of meatloaf. (I double this, because I like toppings) Bake on middle rack for 1 hour or until meat thermometer reaches 155. Let rest ten minutes before serving. I would serve with mashed potatoes, green beans and apple pie. Also, I would lie by the stove with a novel so I could smell it cooking. This serves 8. Or, if you eat like me, 4. You can use ground turkey and turkey bacon, if you prefer.
