Starting Gluten Free: Lesson 1 1.Always Read Labels. The worst thing you can do is assume something is gluten free when it is not and end up sick. Make sure to read complete ingredient list and if a beginner, read it twice. There is a great app that helps you find hidden gluten on labels called, Fooducate; just scan the product label and an explanation with the gluten percentage will pop up. It is convenient and easy. Look for products that are: Certified Gluten Free, made in dedicated gluten free facility and are NOT made in facilities that are shared with wheat products. If you cannot read labels, do not be afraid to ask necessary gluten free safety questions to waiters, grocers, companies or party hosts; nothing is more important than your health. If you do not receive the answer that you are looking for, do not eat it. Watch out for foods like corn and oats if they are not certified GF, cross contamination is a serious issue that is generally overlooked.
