Strawberry Jam...but, in typical my style, not just Ordinary strawberry jam. Strawberry-Cognac jam. Farmer Market fresh strawberries cooked down with cognac, and to keep the cognac theme, a splash of cognac and brandy based orange liqueur. Dont worry you cant taste the orange but it really helps bring out the lovely sweetness of the strawberries while the cognacs add a slight bite to mellow out that natural sweetness of the berries as they macerate In the superfine sugar. A touch of fresh blueberries to keep that deep, yet vibrant color of the strawberries, so the jam doesnt lighten in color as it boils. Finally, Im all about natural. Although pectin is natural its processed in some way to evolve into either powder or liquid form. So I took a different approach and added a finely diced Granny Smith apple. The apple practically melts in the mixture and you have no idea its there. But, since the Green apple has a tremendous amount of pectin in it. It gives this jam that fantastic mouthfeel and wonderful spreadable texture. Even better, I want to deliver on the promise of strawberry jam, so the strawberries are cut into relatively large chunks for the process, which lends the jam a chunky consistency from strawberries all throughout. Deliciously jarred up for sale, and keeping some for myself for the perfect little thank you presents to give out. Now all thats left is to make some soft, flaky, buttery, buttermilk biscuits for breakfast to slather this stuff all over! Although its not exactly my lunch of choice, I clients buying this jam to make an orgasmic PB&J.
