Strawberry season is one of my favourite times of year. Had a few punnets to use up today so it was Strawberry Jam time! Theres no strict recipe, its simple enough not to need one and can be varied to suit individual tastes or preferences very easily. I stewed the hulled fruit (just over a kilo) in a heaped tablespoon of tasteless coconut oil and 1/3 cup of half rice malt syrup half maple syrup. Used 1/4 cup of whole chia seeds to thicken it at the end. A tblspn of Maca powder and Vanilla Bean paste were mixed in for a superfood hit and taste variation at the end too. Love a tasty way to get more of that Maca into all of us. Healthy and delicious!! =) The jam is not as solid or thick as a commercially bought jam ... because its all fruit and no rubbish or jelly fillers. If you prefer it thicker simply add more ground or whole chia seeds when its cooling. This jam goes great on toast, in yoghurt, to flavour kefir drinks, mixed into protein or juice smoothies, over coconut ice-cream, on pancakes, as a topping for the raw vegan cheesecake ... wherever youd use yummy strawberries I guess.
