Stuffed Manicotti Shells Ingredients: 8 oz. ricotta cheese 8 oz. parmesan cheese 8 oz. Romano cheese 12 oz. mozzarella cheese One 12 once package of frozen chopped spinach 12 oz fresh baby spinach One can large black olives Three cloves garlic or three tsp. garlic powder Four ounces olive oil One large egg 1/2 tea spoon oregano 1/8 teaspoon sage 1/8 teaspoon coriander 1/8 teaspoon mignorette pepper ½ tsp. Fresh whole pepper corn, ground. Pre Ground pepper is also adequate 1 1/2 lbs fresh ground beef 1 lb Italian sausage Brown beef in skillet and when mostly cooked cut open and chop Italian sausage into small pieces and lay into skillet to brown. Allow meat to cool once cooked. Mix seasoning in separate bowl and separate into thirds. Boil w4 quarts of water or just enough to cover Manicotti shells. Bring to brisk boil and reduce to high simmer. Allow manicotti to cook until desired tenderness then remove from heat and rinse in colander with hot tap water. Pour manicotti on sheet of parchment or wax paper and separate. As the manicotti is boiling prepare in a large mixing bowl contents listed about. Seasoning should be mixed and separated into two thirds, two one third will be added to meat as it simmers and another third added to mixer blend. The last is used for the topping of your dish. In a large mixer grate cheeses as in bowl saving 4 ounces of the mozzarella for topping the dish. Put in one large egg, cheese and prepared meat chopped spinach and herbs. Mix slowly and fold to consistency. Save fresh spinach for layering on top of dish. With an ice cream scoop take small golf ball sized rounds and place them inside prepared manicotti shells. If shells are sticking rinse again with hot tap water to release. Spoon in generous spoonful of mix in each shell. Place open side down in a large 9X13 pan. Two pans will be needed with this recipe. Cover shells with baby spinach. Setting each shell with shells facing up mix one 12 oz can tomato paste with one 12 ounce can of tomato sauce and one can dice tomatoes. Pour tomato mix over dish and then take remaining mozzarella and sprinkle over dish generously. Add more Mozzarella sheese if desired. Slice black olives and place over top of dish as desired. Preheat oven to 350 F Cover dishes with aluminum foil and bake for 45 minutes, remove foil and bake another 15 minutes if you wish to brown top cheese. Leave covered if not and bake for 1 hour to 1 ¼ hours. If you wish you can freeze this before baking and if you do so baking time will vary. Bake frozen prepared dish for 1 ½ hour covered and 15 minutes to brown surface.
